Ingredients

    1 medium head of cabbage
    1 cup fresh mushrooms, sliced
    1 cup raw carrots, sliced
    1 cup raw celery, diced
    1 cup raw onion, chopped
    1/2 cup long grain brown rice, uncooked
    8 cups vegetable broth
    1 TBSP basil

Directions

Bring vegetable broth to a boil and add onions. Let simmer for a few minutes and then add uncooked rice and all other ingredients. Simmer covered until rice is cooked and cabbage is tender, about 2 hours.

    Added some white pepper (just a dash), a dash of onion and garlic powder. good! Subbed chicken bone broth for the vegetable stock. - 4/1/21
