Ingredients

    Salad
    ~30 Spinach leaves, fresh, rinsed
    4 Romaine Lettuce, inner leaves, rinsed & chopped
    3 oz Bay scallops
    3 oz Shrimp, medium-small
    1 tsp Extra Virgin Olive Oil (for sauteing seafood)
    half Egg, hardboiled, sliced
    1 Medium tomato, sliced
    salt & pepper (to taste)

    Vinaigrette
    1 tsp Brown & Spicy Mustard
    1/2 Tbs Balsamic vinegar
    1/2 Tbs Extra Virgin Olive Oil

Directions

Combine spinach leaves and chopped romaine and arrange on serving plate. Add sliced tomatoes and hard boiled egg slices around the combined greens.

Saute shrimp and scallops in 1tsp olive oil until cooked though. Season to taste with salt & pepper. Drain, and while still very hot, spread upon mixed greens.

Mix ingredients for vinaigrette. Microwave until hot (about 15-20 seconds) and drizzle over seafood and greens.
