Introduction

These are really good, more like little muffin-cookies. You could probably cut back on the sugar, and use whole wheat flour and some applesauce to take out some of the oil. Number of Servings: 12

Ingredients

    1 C Flour
    1 tsp baking soda
    1/4 tsp Salt
    1/2 tsp allspice, cinnamon, ground cloves or combination
    1 egg
    1/3 C oil
    1/3 C packed dark brown sugar
    1 C shredded carrot
    1/2 C oats
    1/4 - 1/2 C raisins

Directions

Makes about 12 big sized cookies.

Combine dry ingredients through and set aside.

Mix sugar, oil, and egg

Add carrots, oats, and raisins.

Gradually add in flour mixture.

Spoon onto tray and cook for about ten minutes.
