Introduction

Wonderful apple brandy sauce to drizzle over salmon. Wonderful apple brandy sauce to drizzle over salmon.
Number of Servings: 10

Ingredients

    3/4 cup or 6 oz. brandy
    1/4 cup apple juice, reduced to syrup
    1 cup whipping cream
    1 cup chopped red onion
    2 tblsp. unsalted butter
    2 tsp. fresh thyme, chopped
    salt & pepper

Directions

Simmer apple juice over medium heat until reduced to a light syrup. Add brandy and mix to combine. Saute onions in unsalted butter until soft. Add brandy mixture and whipping cream to onions with thyme. Cook about 10 minutes, until a sauce consistency is reached. Drizzle approximately 1 tablespoon over portions of salmon. Delicious. Not recommended for low fat diets! Makes at least 10 servings.
