I love slow cooker recipes. If you don't have time to hang around the stove, set this chili on LOW in your slow cooker and head off to work. It will be all ready and flavorful by the time you get home. I love slow cooker recipes. Ingredients

    2 lbs lean beef for chili (or substitute ground beef or ground turkey)
    1 large onion, finely chopped
    1 10-oz can tomatoes with green chilies
    2 1/2 cups tomato juice
    2 TBSP chili powder
    1 TBSP cumin
    1 TBSP minced garlic
    1 can kidney or pinto beans

Directions

Brown meat in skillet. (If using ground beef, drain excess fat).
Add all ingredients except beans to slow cooker. Mix well.
Cover and cook for 7 - 9 hrs.
Add beans. Cook for additional 30 minutes.
Serve with mexican style corn bread.

Makes 10 servings.
