    1/2 C chopped zucchini
    1/2 C chopped sweet red pepper
    1/2 C chopped green pepper
    2 tbs chopped onion
    1 garlic clove, minced
    2 tsp butter
    1/8 tsp Italian seasoning
    1/8 tsp dried oregano
    Dash pepper
    1 Flatout Multigrain Pita
    1/3 C chopped seeded tomato
    1/3 C shredded Italian cheese blend


1. Saute zucchini, peppers, onions and garlic in butter until tender. Sprinkle with Italian seasoning, oregano and pepper; toss to coat.

2. Place the pita on an ungreased bakingsheet. Spoon veggie mixture onto pita. Top with tomato and cheese.

3. Bake at 450 degrees for 8-10 minutes or until cheese is melted.

  • I used to make these with the whole wheat pitas and use regular pizza toppings on them for the kids but use part skim mozzarella and spinach sprinkled with garlic for mine!Turns out the kids began to want mine instead of theirs! - 10/5/09
