Ingredients

    1 tbsp olive oil
    1 cup chopped onion (1/2 large)
    1.5 cup chopped bell pepper (2 any color)
    1 cup diced celery (2 large stalks)
    3 tsp minced garlic (3 cloves)
    1 lb lean ground beef
    1 tbsp chili powder
    1 tbsp dried oregano
    2 tsp cumin seed, slightly crushed
    2 tsp salt
    1 can each: pinto beans and kidney beans (15 oz)
    1 can diced tomatoes (14.5 oz)
    1 can tomato sauce (15 oz)
    1 tbsp ketchup

Directions

heat oil in dutch oven or large pot over med. heat. Add onion, pepper, garlic, and celery. Cook, stirring, until veggies bein to soften (about 5 minutes). Add ground beef and brown, stirring. When beef is almost done, add spices and cook about 5 more minutes, stirring occasionally. Add beans and tomatoes with their juices, tomato sauce, and ketchup. Simmer until thick and fragrant, about 25 minutes.
Makes just under 10 cups.

    Spectacular flavor! I used celery salt in place of celery and cumin powder instead of cumin seeds, half a can of petit diced tomatoes instead of a whole can. It was dee-lish! I will make this everytime I want chili from now on! thanks so much for the recipe! - 6/14/11
