    eggs, potatoes, onion, olive oil

Directions

Peel and slice the potatoes. Peel and slice the onion and slice. Put in a pan with the olive oil and saute covered till tender and cooked. In a bowl beat the eggs. When the potatoes are cooked pour the eggs over and let cook for about 5 minutes. Turn around and cook another 3 minutes. Makes 4 servings.
