Ingredients

    1 lb Italian sausage
    2 cup chopped onion
    2 cup sliced carrots
    2 cup mushrooms (optional)
    2 cloves garlic minced
    4 cup chicken broth
    1 can Italian style stewed tomatoes - chopped
    1 can tomato sauce
    2-3 cup mini lasagna noodles
    2 cup fresh spinach or kale finely chopped
    water as needed

Directions

Brown sausage and add onions and carrots and cook apporx 3 min. Stir in mushrooms and garlic and cook approx 3 min. more. Add broth, stewed tomaotes, tomato sauce and bring to a boil. Drop in pasta and spinach and cook approx 10 min or until pasta is done. Serve garnished with cheese (I used parmesan, but you'll need to add calories)
