Ingredients

    2 1/2 cups unbleached all-purpose flour
    1/2 cup Splenda/sugar blend for baking
    1/2 cup sugar
    1 tsp salt
    1 tsp baking powder
    1 tsp baking soda
    1 tsp + 1/2 Tbsp baking cocoa
    2/3 cup All White egg white substitute
    1 1/2 cups applesauce
    2 Tbsp red food coloring
    1 tsp vanilla extract
    1 tsp apple cider vinegar
    1 cup milk, mix with 1 Tbsp lemon juice & let stand for 5 minutes to make buttermilk

Directions

Mix dry & wet ingredients separately before slowly mixing dry ingredients into the wet using an electric mixer. Spray silicone cupcake holders or line pan with cupcake liners or spray cupcake pan before pouring mix in each cup until 2/3 full. Bake at 350 for 22 minutes. When toothpick comes out clean in the center, cupcakes are done. Makes 24 cupcakes.
