Ingredients

    1/2 cup all-purpose flour
    1/2 cup whole wheat flour
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    2 medium mashed ripe banana
    1/4 cup white sugar
    1/4 cup yogurt
    1 egg
    1/2 teaspoon vanilla extract
    1 Tbsp lemon juice
    1 cup blueberries

Directions

Preheat oven to 350 degrees F (175 degrees C).

Mix together flours, baking powder, baking soda and salt.

In a separate bowl, beat together banana, sugar, egg, vanilla. Stir in the yogurt and lemon juice.

Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

Bake in preheated oven for 20 minutes, or until muffins spring back from a light touch. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

    Incredible!
    Excellent recipe! Easy to make, smell delicious while baking, and not too sweet! Perfect with a bit of jam. Went perfectly with my blueberry smoothie this morning! I was able to get 12 mid-size muffins out of this recipe. I used large (frozen) blueberries. Will definitely be trying them again! :) - 8/2/14

    Very moist! I used applesauce instead of yogurt because I didnt have yogurt. I also added a tbsp of flax seed, my girls loved them! - 3/7/10
