Ingredients

    1 14 oz can black beans
    1 14 oz can corn
    1 pint grape tomatoes
    1 package kashi pilaf
    juice from 1 lime
    5 Tbls olive oil
    2 Tbls cidar vinegar
    1 tsp cayenne pepper
    4.5 tsp chili powder
    cilantro, to taste
    1 avocado
    about 2 cups of shredded or cubed chicken , cooked(I use half of a rotisserie chicken)

Directions

Cook Kashi pilaf according to package directions.

In large bowl, mix together black beans, corn, tomatoes, cooked kashi pilaf, lime juice, olive oil, vinegar, cayenne, and chili powder, and cilantro. Mix well, taste and adjust seasonings, if necessary.

Add avocado and chicken and mix gingerly.

Serve with tostadas, if desired.
