Introduction

A low calorie, high nutrient salad that is great with a protein added for a meal by itself or as a side for lunch or dinner. The feta cheese add a hint of salt and savoriness without too much fat or sodium. Ingredients

    .5 bag of American or greener salad blend
    1.5 cups torn fresh spinach
    .5 cucumber with the peel on chopped
    4 radishes halved and sliced
    5 medium button mushrooms halved and sliced
    2 slices red onion chopped into small pieces
    1 large Roma tomato chopped
    1.5 T balsamic vinegar
    3 T feta cheese
    .25 tsp black pepper (or to taste)




Directions

Add all veggies and vinegar to a large bowl with a lid and toss. Sprinkle crumbled feta over the top and add black pepper to taste.

Makes 3 servings of approximately 2 cups.
