my uncle's recipe my uncle's recipe
Number of Servings: 6


    1lb bag of red beans
    1 lb andoille sausage, cut into desired pieces
    4 servings of rice (you can vary this depending on what ratio of beans to rice you want)
    2 bay leaves
    red pepper (to taste)
    black pepper (to taste)
    2 medium yellow onions, diced
    4-8 cloves garlic, minced (depending on what you like)


cook onions and garlic in desired oil (I use olive oil for everything except baking)
add sausage to brown
add red beans
cook for 4 hours on medium high heat adding water as it boils out
I also mush some up with a spoon to make it creamy
cook rice per instructions on bag
pour red bean mixture over rice
serve with french bread

makes 6-8 servings
