    2 Tbsp olive oil
    2 cups chopped onions
    1/2 cup chopped celery
    2 Tbsp minced garlic
    8 cups water
    3-1/2 cups beef broth
    2-1/2 cups lentils (rinsed)
    1/2 cup barley
    1-1/2 tsp salt
    1 tsp pepper
    1 tsp dried oregano
    1 can (16 oz.) chopped tomatoes
    1 pkg (10 oz.) chopped frozen spinach


Heat oil in soup kettle and add onions, celery and garlic and cook until tender (about 8 minutes). Add water, broth, lentils and barley. Cover and bring to a boil. Reduce and simmer 1 hour until lentils are tender. Add salt, pepper, oregano, tomatoes, and spinach. Simmer for 5 minutes until heated through. Serve. Makes eight 2 cup servings.

  • Yummy, easy dinner. I used vegetable broth instead of the beef broth and rice rather than barley, to accomodate all family members' tastes. I wouldn't have minded it a little spicier, but overall the recipe is a winner! - 6/18/07
