Introduction

This is a simple main course meal for two. This is a simple main course meal for two.

Ingredients

    Pork Tenderloin, 6 oz
    Fried Egg, 2 large
    Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
    Waterchestnuts sliced 1-8oz can
    Scallions, raw, 1 medium (4-1/8" long)
    Olive Oil, 2 tbsp
    Soy Sauce (low sodium, 1 tbsp

Directions

This is a 2 serving recipe

Cook rice as directed on package and place in a 6 quart non stick pot.

Cut pork into small pieces and place in a non stick frying pan with 1 tbsp oil. Flash fry, on high, until cooked. Immediately add to rice.

In the same frying pan scramble two eggs, with 1 tbsp of oil.
Add to rice.

Place the rice mixture on high heat and add celery, waterchestnuts, scallions (finally chopped) and the soy sauce. Stir continually until steam bagins to rise from the mixture.

Serve immediately
