Looking for a healthy quick lunch with delicious flavor? This was created from a few things in my fridge but you can cook the spaghetti (or favorite high fiber pasta) fresh and throw the rest of the ingredients together. Very healthy and delicious! This was created from a few things in my fridge but you can cook the spaghetti (or favorite high fiber pasta) fresh and throw the rest of the ingredients together. Very healthy and delicious!

Ingredients

    1 oz dry, Ronzoni Smart spaghetti cooked without salt accourding to package directions -about 2.75 oz. cooked)
    1/2 cup white kidney beans (cannellini), rinsed
    1/2 of a large ripe tomato, cut into bite size pieces
    2 T. shredded parmesan
    1 tsp. light ranch dressing
    pinch of basil
    fresh ground pepper to taste

Directions

In a large soup bowl combine all the ingredients, seasoning to taste. Mix well to combine flavors. This recipe is for one lunch serving but it can easily be made for a side salad or made for several people as a main dish. Just multiply the ingredients according to servings.

I enjoyed the salad at room temperature but it can be heated or chilled according to your preference. Enjoy!!
