Introduction

This is an east, but tasty, recipe I adapted from a recipe from the Taste of Thai website. If you're looking for something easy to prepare that will give you a little spice & taste great, this is your recipe. My family loves this. I usually serve with Jasmine or white rice. Ingredients

    Vegetable oil or spray
    16 oz. (1 lb.) Boneless, skinless chicken breast
    1 - 3.5 oz packet Taste of Thai Spicy Peanut Bake

Directions

Preheat oven to 350°F.
Coat chicken with Spicy Peanut Bake (1 envelope)
Place in ovenproof baking dish, sprayed with non-stick cooking spray.
Sprinkle any excess Spicy Peanut Bake over top of chicken.
Bake uncovered until done, about 40-50 minutes.

    Incredible!
    I make this by placing a wire rack on a baking sheet and putting the chicken on the wire rack (so air circulates all over). Prefer using thin sliced chicken and serving over a bed of romaine, edamame, cucumbers and slivered carrot with a homemade asian peanut dressing - 11/8/10
