Nice way to use the left over cranberries from thanksgiving Nice way to use the left over cranberries from thanksgiving
Number of Servings: 6

12 oz/340 g bag fresh or frozen cranberries - unsweetened
    4 cups water
1/2 cup sugar - or less if you like a tart juice

Put cranberries and water in pot. Heat on medium high heat for 10-15 minutes. Cranberries should "pop."

Strain through cheesecloth (if you want clear juice) or in a strainer over a bowl (if you do not mind some fruit in your juice). Do not push down on the fruit to extract more juice - it just makes a mess.

Put juice back in pot and add sugar to taste. Heat an additional 5 minutes to disolve sugar.

Serve warm or cold.

Cranberries are highier in antioxidents than raspberries.
i.e. Cranberries register 9,584 ORAC value
    Raspberries register 4,882 ORAC value
ORAC = Oxygen radical absorbance capacity
Cranberies are analyzed with other fruit for their antioxidant power by measuring their ORAC. Powerful frut - 3/2/10

I made this with fresh berries bought from the grower. Fantastic!
I used splenda instead of sugar. It worked very well - 11/10/12
