Introduction

Heat in crock pot all day and serve over rice (good with brown or white rice.) Sodium level is pretty high even using reduced sodium chicken broth. The amount of olives can also be reduced or you can drain them. You can also use less chicken broth if you want it thicker. Ingredients

    4 boneless skinless chicken breasts
    1/2 tsp dried thyme
    1 can (or 2 cups) chicken broth
    1 28 oz Italian Style diced tomatoes
    1 small (5.75 oz) jar pimento stuffed olives

Directions

Place chicken breasts in crock pot and sprinkle with thyme. Add tomatoes, chicken broth and olives. Cook on low 6-8 hours. Serve over rice.
