Ingredients

    12 boneless skinless chicken thighs
    1 large red onion, sliced
    3 green bell peppers, quartered
    6 med red potatoes, halved
    1/2 Tbsp kosher salt
    6 plum tomatoes, halfed
    1 tsp. dried thyme
    1 tsp. dried oregano
    1/2 tsp. red pepper flakes
    7 Tbsp olive oil
    6 tsp. dijon mustard
    1 tsp. black pepper

Directions

Place all ingredients in roaster. Stir and roast at 500 degrees for one hour. Makes 12 servings.
