Ingredients

    2 T. butter
    2 T. olive oil
    2 large onions, sliced
    3 cups baby spinach leaves
    6 large eggs
    1.25 cups of all white egg substitute
    2 cups non fat milk
    2 cups low fat cottage cheese
    2 cups crumbled feta cheese
    6 ozs. low fat cream cheese
    1/2 cup flour
    1 T. baking powder
    1 T. tumeric
    1 T. garlic powder
    salt & pepper to taste
    2 cups shredded swiss cheese

Directions

Preheat oven to 350 degrees.

Heat heavy pan over medium high heat. Melt butter and add olive oil. Carmelize onions in butter and olive oil. Stirring occasionally. Remove pan from heat and add spinach cooking it down. Place onions and spinach in a 9x13 pan. Sprinkle crumbled feta cheese over the top. Place cubed low fat cream cheese evenly over top.

Mix eggs, egg whites, milk, cottage cheese, flour, baking powder, spices, salt and pepper to taste in a large mixing bowl. Mix well.

Pour egg mixture over veggies and cheese in 9x13 pan. Bake in preheated oven for 45 minutes. At the end of 45 minutes, sprinkle shredded swiss cheese over the top of the casserole. Turn off the oven and return casserole to oven and allow cheese to melt and casserole to rest. Serve. Makes 24 servings.
