Ingredients

    150g dry couscous
    1/2 chicken stock cube
    2 courgettes, thickly sliced
    6 small-medium tomatoes, thinly sliced
    1 small red onion, thinly sliced
    3 tsps dried thyme
    Juice of 1 lemon
    2 tbsp olive oil
    3 cloves of garlic, finely chopped

Directions

Preheat the oven to 200 C / gas mark 6.

Chop the courgette, onion and garlic, and put them in a large bowl. Cover with the olive oil, lemon juice and thyme, and stir until everything's evenly coated.

Transfer the mixture to a large roasting tin, and cook for 15 mins. Chop the tomatoes while you wait.

After 15 mins, add the tomatoes and stir again. Put back for another 20 mins.

While that's cooking, mix about 200ml of water with the stock cube and mix with the dry couscous. Cover and allow to soak.

When the vegetables are done, mix them and their juices through the couscous. Serve immediately, or chill to enjoy later.

    haven't tried it yet, but it sounds good. One question however, if you're using a _chicken_ stock cube how can it be vegetarian? - 7/25/10
