Introduction

Ingredients

    32 ounces chicken breast meat
    1/2 cup almonds, slivered
    1 pkg. Ramen noodles, chicken or oriental
    1 large head of cabbage, chopped
    1/2 cup onions, chopped
    1/3 cup olive oil
    1/3 cup cider vinegar
    1/3 cup balsamic vinegar
    1 t. black pepper
    2 T. honey

Directions

Cook chicken and cut into small chunks. May be boiled, but we love to grill it in summertime. Crush ramen noodles and set aside seasoning packet. In 350 degree oven, toast almonds and crushed ramen noodles until lightly browned, about 10-15 minutes. Watch carefully. Cool slightly. Combine cabbage, chicken, onion, noodles and almonds in large bowl and set aside.

In small saucepan, combine olive oil, vinegars, pepper, honey and seasoning packedt from the Ramen noodles. Heat to boiling and simmer 3 or 4 minutes. Pour over cabbage mixture and mix. Refrigerate. Twelve yummy servings.
