Ingredients

16 oz. carton Daisy Light sour cream
2 10.75 cans Campbell's Healthy Request Cream of Chicken soup
1 T. lemon juice
6 chicken breasts, boiled, bone and skin removed
1 sleeve Ritz whole wheat crackers, crushed
1/2 cup Smart Balance Buttery Spread, melted
1 T. poppy seed
Directions
Makes 8 servings.
Boil chicken breast until done, about 35-45 minutes. I put in crock pot while I am at work.
Preheat oven to 350 degrees.
After chicken breasts are boiled and cooled, remove bone and skin, and tear into bite sized pieces.
In large bowl, combine sour cream, soup, and lemon juice. Stir in chicken pieces until all are well combined. Pour into 9x13 cassarole dish.
Pour melted butter spread over crushed cracker crumbs and stir until crumbs are coated. Spread evenly over chicken mixture. Sprinkle with poppy seed.
Bake at 350 degrees for 30 minutes or until bubbly.
Cool slightly before cutting into 8 servings.
