Number of Servings: 6

Ingredients

    1 Tbsp butter or margarine
    2 Tbsp all purpose flour
    2 cups skim milk
    1/4 tsp salt, if desired
    1/4 tsp fresh ground pepper
    4 large potatoes (about 2 pounds) peeled and sliced thin
    1 large onion, sliced thin
    1/2 pound green cabbage, shredded (2 cups), or more if desired
    1/2 pound kielbasa, sliced thin

Directions

1. Preheat oven to 350 degrees.
2. In medium saucepan melt butter and stir in flour. Cook roux for 1 minute and gradually add milk stirring constantly to eliminate lumps. Cook over medium low heat until sauce thickens to consistency of buttermilk. Stir in salt and pepper, set aside.
3. Grease a 2 1/2 - 3 quart casserole. Spread 1/3 of potato slices on bottom. Distribute half of onion slices followed by half the cabbage and half the kielbasa inlayers over the potatoes. Add 1/3 of sauce. Repeat with another third of potatoes and the remaining onion, cabbage and sausage and another third of the sauce. Top with remaining potato slices and remaining sauce.
4. Cover the casserole and bake in 350 oven for 1 hour 15 minutes or until potatoes are tender.If desired, and if there is enough liquid in the casserole, remove the cover for the last 15 minutes of baking time.
