Introduction

This is a "salad" my Polish friend offered me while we are studying abroad. I expected, well, a salad. But I got this cold RICE, CORN, & CHICKEN MEDLEY. It is delicious!!!!

It's good for lunch or dinner... cold or hot.

Ingredients

    400g (apx. 2 Cups) - White Rice
    --------------------------------------------
    2 tbsp - Oil
    100g (apx. 1/2 Cups) - Chopped Sautéed Onions
    1 Chicken Breast
    1 Can Yellow Sweet Corn
    2 - 5 tbsp Mayonnaise

Directions

- First, start to cook the rice (that's 1 part rice, 2 parts water).
- While the rice cooks, chop up onions and saute them in about 2 tbsp of oil or whatever you need to make it not stick.
- In the meantime, use a meat hammer to thin 1 chicken breast.
- Once the onions are sauteed, clear a space in the pan for the chicken
- Add the chicken on medium low heat and scoop the onions on top of the chicken to ad flavor.
- By now, you're rice is probably done, so remove it from the burner.
- When the chicken is done cooking, take it out of the pan and the can of corn (draining it first)
- While the corn heats, cut the chicken into small chunks, maybe the size of your thumbprint.
- Add the chicken to the corn and onions.
- Add the rice and mayonnaise
- Stir until mixed well.

- You can eat it hot, but the Polish eat it cold. It makes good leftovers.
- SERVES 6 (about 215 grams per person)
