Introduction

I searched far and wide for the best broccoli cheese soup recipe, and this is it! I improved the recipe with 2% Velveeta to help the calories. Ingredients

    1 Medium Onion, finely chopped
    1 1/2 C. Carrots, finely chopped
    2 T. Extra Virgin Olive Oil
    1 Quart Chicken Broth
    1 can Cream of Chicken Soup
    1 bag frozen broccoli
    1# 2% Velveeta, cubed
    3/4 C. Skim Milk
    3 T. Flour

Directions

Saute chopped onions and carrots in olive oil, then set aside.

Heat broth, can of soup and broccoli and cook until heated through.

Add onion/carrot mixture and cubed cheese and simmer 15 minutes. Stir often.

Thicken milk with flour in small cup or dish. Turn soup up to almost a boil, and add milk/flour mixture.

Cook 10 minutes more.

Serve with crackers or good, crusty bread.

Great leftover!
