Ingredients

2 tbsps butter or margarine (calculated with unsalted butter)
5 tbsps olive oil
1 can whole tomatoes
4-5 cloves minced garlic (calculated w/ 5)
1/2 bottle (3-3/4 oz) of Minute Maid Premium Lemon Juice
1/4 tsp of salt
1/2 to 1 tsp of pepper (calculated with 1 tsp)
8 ouces fettucine or spaghetti (calculated with spaghetti)
2 pounds peeled shrimp or 4 skinned and boned chicken breast halves cut in strips (calculated with four whole breasts instead of halves)
Directions
Melt butter in a large skillet over medium-high heat; add 2 tablespoons of olive oil and minced garlic. Add tomatoes. Cook 3 minutes, stirring constantly. Add salt and pepper. Bring to a boil; poor mixture over pasta. Add parsley, toss gently, set aside. Heat remaining olive oil in a large skillet over medium-high heat; add shrimp or chicken strips and saute until done. Add lemon juice and saute for 1 minute. Add shrimp or chicken to pasta. Serve immediately. Yield: four servings.
Leftovers still taste great a couple of days later. Makes a filling lunch or dinner.
