Ingredients

    ½ - cup egg Beater (egg substitute of 2 eggs)
    1 – 6 ounce nonfat yogurt, flavored
    ¼ - cup skim milk
    2 - tsp vanilla
    1 - cup all-purpose flour
    1 - cup whole wheat flour
    ½ - cup packed brown sugar
    ½ - cup brown sugar substitute
    2 - tsp backing soda
    2 - tsp cinnamon
    ½ - tsp low sodium salt
    1.5 - cups shredded carrots (4.5 ounces)
    2 - small apples, shredded *peeled
    2 – 1.5 ounce boxes of raisins
    1.5 ounces chopped walnuts

Directions

Preheat oven to 350 degrees. Place 24 paper baking cups in regular size muffin tin. In large bowl whisk together egg beater, yogurt, milk, and vanilla with wire whisk. In separate bowl sift together flours, backing soda, cinnamon and salt and add in brown sugar and mix all together. Add dry ingredients to liquid stirring until mixture is just moistened. With spoon, stir in carrots apple, raisins and walnuts. Divide batter evenly among 24 muffin cups, filling each about ¾ full. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool muffins 5 minutes, before removing from muffin pan.
