Introduction

Great side dish. Something different! The dish is always empty when I bring it home from a dinner! The onions sweeten up when you cook them. Great side dish. Something different! The dish is always empty when I bring it home from a dinner! The onions sweeten up when you cook them.

Ingredients

    2 large white onions
    2 T Olive Oil
    1 c Kroger Pizza Cheese (any white cheese)
    1 can cream of mushroom soup (small)
    1 teas Lite Sodium Soy Sauce* (can be omitted)
    12 oz seasoned croutons

Directions

Peel and slice onions thin, about 1/4" or 1/3 " wide. Separate the rings of the onions and place heated olive oil in skillet. (To make it easier to cook the onions - you can cut the rings in half or just 1 cut so it no longer is in the ring shape. Simmer the onions until clear. If they get a bit carmelized (brown), it's okay.

In saucepan heat mushroom soup and 3/4 can of water, and soy sauce.

In 2 quart casserole dish, sprinkle 1/4 of the croutons, When onions are done, add them to the casserole dish. Cover with cheese. Pour the soup mixture over the cheese. Top with remaining croutons. Cover with foil.

Bake in 325 oven for 30 minutes. (Just make sure the cheese is all melted)

** My family loves cheese. We've made it with 2 cups of cheese, and put 1/2 cup in the bottom of the casserole dish on top of the croutons, with the remainder on top of the onions.
