Ingredients

2 large eggs
scant 2 cups milk
2 tsp sugar
.5 tsp vanilla extract
1.5 c flour
Butter for frying (this is included in the nutrition info)
Directions
Place eggs in blender. Add milk to equal 2 cups (use line on blender container). Add sugar and vanilla, and blend on "mix". Slowly add flour.
Melt small pat of butter in hot 10 inch case iron pan. pour some batter into pan and turn to spread. Cook till edges look almost dry, then flip.
Serve by adding filling of choice (syrup, honey, jam, butter, farmer's cheese for blintzes) and rolling. Fillings not included in nutrition info).
Makes ~12 crepes.
