Ingredients

6 Acorn Squash halved
1 Egg
1 Cup Cilantro chopped
6 Slices of white bread
1 pound extra lean ground beef
Salt
Pepper
Directions
Cut the Squash in halves, remove seeds, cut the bottoms off so that the when the squash is set down it won't topple over.
Stuffing
Put your extra lean ground beef in a large bowl, add the egg, chopped cilantro, salt, pepper. Take three slices of bread in your hands and pour running water very quickly over each slice of bread on both sides, then squeeze out all the water and add to the beef in the bowl, repeat with remaining slices of bread. Using your hands mix up all the ingredients until all the bread is mixed thoroughly.
Place the squash into an large baking dish. Add water to the dish around the squash, fill the squash with the ground beef mixture. Cover with foil and bake for 1 hour and 15 mins. Remove the foil and continue to bake so the tops get golden brown, approx. 10 mins.
