Ingredients

    1 1/2 cups skim milk
    1 cup Old Fashioned Oats
    3/4 cup sifted combination of half all purpose flour and half whole wheat flour
    1 cup blueberries
    1/2 cup chopped walnuts
    1/4 cup oat bran
    2 Tbsp. Honey
    1 Tbsp. Baking Powder
    1 tsp. Salt
    2 Eggs, beaten

Directions

Pour milk over oats and sift flour, baking powder and salt. Lightly stir eggs into oat mixture. Add honey and dry ingredients, stirring until combined. When the batter is thoroughly mixed, stir in the blueberries and walnuts. Portion 1/3 cup ladles of batter onto a preheated, greased griddle and cook until tops are bubbly and edges look cooked. Turn over and finish cooking on the other side. Makes 12 pancakes (3 per serving). Serve topped with mapel syrup.

    The batter was thin and needed adjustment. I made it with the oatmeal as dry. Was it supposed to be cooked or something? Are the measurements correct? - 2/6/11
