The chicken comes out mosit with an amazing Thai peanut taste. The penauts and peanut butter are perfectly complimented with the cool flavorings of the salsa, soy sauce, and lime juice. Ingredients

    1 lb Boneless, Skinless Chicken Breast
    ¾ cup Salsa
    2 tbsp Lime Juice
    1 tbsp Soy Sauce
    1 tsp Ginger Root, grated
    ¼ cup Peanuts, chopped
    ½ cup Peanut Butter
    2 tbsp Cilantro, chopped

Directions

Mix all ingredients together except chicken and cilantro. Place chicken breasts in slow cooker and cover with peanut butter mixture.

Cook on low for 4 hours.

Sprinkle chicken with cilantro before serving.

    Incredible!
    One of my now favorite meals! I added ~1/4 cup water to keep it moist (didn't have greek yogurt on hand) and used 1/2 tsp ginger because it was ground. I am a big fan of Thai peanut sauce and salsa separately, so this tastes AMAZING! I served it over brown rice and used medium/hot salsa for a kick. - 1/31/11

    I tried this recipe today, and I was pretty skeptical based on the peanut butter, salsa, soy sauce combination, but I thought I would give it a try. I did make some adaptations, I added red pepper flakes for heat and chicken broth for moist meat and it was GREAT! I also Cooked noodles to go with. - 1/13/11

    This was good, but a little dry. I added a dollop of plain Greek yogurt to the finished product, and it was to die for! Thanks for the recipe! - 9/13/10
