Introduction

Ingredients

    Elbow macaroni - 8 oz
    1 cup shredded cheddar cheese
    1 tbs margarine/butter
    1/2 cup whole wheat all purpose flour
    water to boil macaroni in (about 4 cups)
    2 tbs grated Parmesan cheese
    1 1/2 cup nonfat milk

Directions

Cook pasta as usual, drain and set aside.

Melt margarine in large skillet, add flour and whisk for about 1 minute. Slowly add the milk, increase the heat, and keep whisking until it boils and thickens - for about 5 minutes.

Remove from heat, add cheese and keep stirring. Add salt and pepper to taste, mix into pasta and stir to coat. There you have it!

Makes about 12 1/2 cup servings.
