Introduction
This is one of my favorite recipes for preparing fresh greens - beet greens, mustard greens, chard, collards, what have you. It is simple and delicious - and really nutritious - as long as you incorporate all the water from cooking the greens back into the dish. Ingredients

1 chard or collard leaf = about 1/2 cup
4 chard leaves
3 collard leaves
1 tsp salt
Water - about 3.5 cups
2 TBSP Olive Oil
2 Cloves Garlic
1/2 small onion or a little leek or scallions
Juice froma wedge of lemon or more, based on taste
Directions
1. Wash Greens thoroughly and slice thinly
2. Boil greens in water with salt- just enough to cover - about 3 - 10 mins, depending on how tough the greens are.
3. Separate greens from water and reserve water.
4. Dice garlic and onions and saute with half of oil.
5. Add greens to this mixture and continue sauteing for a few more minutes.
6. Add water back in to dish. Add lemon and drizzle remaining olive oil to taste.
Notes: Use a good extra virgin olive oil to drizzle or else it's almost not worth it. Also, if you find you have too much water and don't want to add it back into the dish, don't throw it away! Drink it!
