Ingredients

2 medium summer squash, halved & quartered
1 can Hunts diced tomatoes, with basil, garlic & oregano (drained)
1 tsp minced garlic
1 tbls olive oil
1/4 tsp salt
1 tsp oregano
Directions
Add all ingredients to a medium pan over medium heat. Saute/simmer until squash is softened, but not soggy.
Makes 4 1 cup servings.
Serve as a side, over rice, pasta or as a snack.
