Inspired by another pumpkin pancake recipe. Inspired by another pumpkin pancake recipe.
Number of Servings: 3

Ingredients

    1 Cup Fiber One Pancake Mix
    2/3 Cup Light Vanilla Soy Milk (I used 8th Continent)
    1/3 Cup Canned Pumpkin (plain, not pumpkin pie filling)
    1/2 Cup Quick Cooking Oats (plain)
    1 Tbsp Honey
    1 tsp Pumpkin Pie Spice

Directions

Preheat griddle or frying pan. To test pan for readiness, drop a few drops of water onto surface. Pan is ready when water bubbles skip across sruface.

Combine all ingredients in a medium mixing bowl.

Lightly spray griddle or pan with cooking spray.

Drop batter onto heated griddle by about 2 Tablespoon portions and lightly swirl to spread as batter will be thick. Turn when edges begin to become dry and bottom appears golden brown. Cook second side until golden brown.

Serve with butter, syrup, whipped cream or applesauce.

Makes about 9 pancakes, 3 pancakes per serving.
