Introduction

These are soooo delicious! Get rave reviews every time i make them. Can adjust ingredients to your individual tastes. Use any dried fruit (the cherries give a nice sweet tang), can use almond butter instead of peanut butter, but i find the peanut butter offers more flavor. and any nut instead of walnuts. have fun with them... i did! *note, brown rice syrup is a mild binding sweetener, and can be found in natural food markets.* (a friend subbed agave nectar and were WAY too sweet!) Ingredients

    1 cup almond or peanut butter
    1 cup brown rice syrup
    3/4 cup chopped walnuts (or nut of your choice)
    1/2 - 1 cup chopped dried cherries, raisins or cranberries
    3 cups kashi puffed wheat cereal
    1/4 cup raw pumpkin seeds
    2 tsp cinnamon
    1 1/2 tsp vanilla

Directions

Can make bars as large or small as you like. My nutritional calculation is for 20 bars.

-Lightly coat 13x9 in pan w cooking spray
-in large saucepan, heat nut butter and rice syrup over low heat until bubbles begin to form.
- add vanilla
-quickly stir in dry ingredients until well combined
-when mixture is cool enough to handle, press into prepared pan and put in fridge to cool completely.
- when cooled, take out of fridge and cut into 20 bars.
- individually wrap and refrigerate.

    Incredible!
    Love it!!! I used Agave syrup and 2 T. honey (because it needed more liquid) with almond butter. Also I had toasted and salted pumpkin seeds and used Ezekial 4:9 almond cereal. The bars are so delicious and the cereal I used is a bit more crunchy, which I love. - 7/18/11
