I didn't have regular soy milk, so I used chocolate, and it turned out just fine. Also, Instead of the oil and much of the honey, I just added extra (1 C.) banana. Ingredients



    * Arrowhead Mills Gluten Free All Purpose Baking Mix, 1.75 cup
    * Walnuts, .5 cup, chopped
    * *Milk, Silk Soy Milk Organic, Plain, .25 cup
    * *Canola Oil, .25 cup
    * Honey, .25 cup
    * Banana, fresh, .5 cup, mashed
    * Vanilla Extract, 1 tsp
    * Baking Powder, .5 tsp

Directions

Makes 12 slices

Preheat oven to 350.
Mix dry ingredients, then form a well in the center.
In separate bowl, combine wet ingredients, then pour into the well.
Mix until well blended, then pour into sprayed loaf pan.
Bake at 350 for about 40 minutes, or until toothpick comes out clean.

    O.K.
    This didn't taste like banana bread to me. It was kind of like a plain bread with nuts; I hardly tasted the banana at all, even though I added extra banana. I think I'll try omitting the vanilla and nuts and adding some oats, and use it as a sandwich bread. - 3/16/10

    Glad to help. we're trying to do this for my son -- he's having stomach problems. It came out a little dry the way I made it, so tweak it the way you see fit...
