Introduction

Ingredients

I usually eyeball the amounts.
*1 salmon fillet, approx 1.5 lbs.
*2 tbsp extra virgin olive oil (one goes on the foil, one on the fish)
*3 tbsp brown sugar
*1 tsp lemon juice OR two whole lemons, ends cut off and sliced to 1/4" thick
*salt and pepper, if desired
Directions
1) Lay out a piece of foil on a baking sheet. Use 1 tbsp of the olive oil to grease the foil so the fish doesn't stick.
2) Lay out your salmon on the greased foil. Using your hands, spread the last tbsp of oil to season the fish. Do the same with the brown sugar. Sprinkle the lemon juice on top, if available. If not, lay out the lemon slices so the edges do not touch. Sprinkle the salt and pepper over the top.
3) Fold the edges of the foil over the top so it creates a sealed pouch. Place in a pre-heated 425* oven and bake until the salmon is cooked all the way through. Check after 30 minutes to make sure it is not cooking too quickly.
Makes approx. 6-4oz portions.
