Ingredients

    Cauliflower, raw, 3.5 cup
    Butter Spray, I Can't Believe It's Not Butter, 25 sprays, 2 tsp
    *Skim Milk, .25 cup
    Fat Free Sour Cream, .66 tbsp (2 tsp)
    Cream Cheese, Publix Fat Free, 1 tbsp
    Molly McButter, 1tsp, if desired

Directions

Cut up half of a head of cauliflower (about 3-4 cups). Spray with butter spray, put a little water in the bottom of the dish, and microwave, covered, for 3-5 minutes (I did 4 minutes). While cooking cauliflower, assemble 1/8 to 1/4 cup milk, and any other ingredients you want (sour cream, cream cheese, molly mcbutter, salt, dill, cheddar cheese, olive oil, or anything else you'd want on mashed potatoes).

I put all my ingredients into the milk's measuring cup, and as soon as the cauliflower was cooked and soft, I dumped it and the toppings right into the blender. Blended for about 15 seconds (my blender is very strong - blend until your desired consistency, adding more or less liquid if you like your potatoes thicker or thinner). Serve and enjoy!!

    I really enjoyed this recipe. I didn't read all the instructions, and mashed it with a potato masher. My husband thought it would have been better if I had blended it, but I liked the coarse texture. I'll blend it next time. - 12/1/07

    I used a whole head of cauliflower, 1/2 c of skim milk and 1/2c of reduced fat cheese with a good deal of pepper. DH and DS liked it but griped that it was not "real" - 11/26/07

    I loved this recipe! So glad I found it! Just be careful not to add too much milk or it will get soupy and for those who think it is flavorless I added a little cheese to give it a great taste (any cheese would do!) - 11/13/07
