Ingredients

    VEGETABLES AND TOFU:
    1/3 CUP OLIVE OIL
    1 BLOCK FIRM TOFU, CUT INTO ¾ INCH CUBES
    1 CUP CARROTS, SLICED INTO THIN DIAGONALS
    4-5 CUPS BROCCOLI, CUT INTO FLORETS, THE STEMS PEELED AND CUT INTO THIN DIAGONALS
    1 BUNCH GREEN ONIONS, CUT 1 INCH LONG, INCLUDING THE GREEN PART
    1 RED PEPPER, SEEDED AND THINLY SLICED
    1 GREEN PEPPER, SEEDED AND THINLY SLICED

    SAUCE:
    ½ CUP WATER
    ¼ CUP SOY SAUCE
    2 TSP. FRESH GINGER ROOT, GRATED
    4 CLOVES GARLIC, CRUSHED

    GLAZE:
    1 TBSP. ARROWROOT FLOUR
    ¼ CUP WATER

Directions

Heat oil in wok. Sauté tofu on all sides in hot oil, until evenly brown, 10-15 minutes. Add sliced carrots and cook two minutes. Add broccoli florets and stems. Stir until lightly cooked, 5-7 minutes. Add sauce. Cook, stirring occasionally, until broccoli is bright green but still firm. Vegetables must remain lightly cooked and crisp. Add green onions and peppers, and then glaze. Stir until sauce has thickened and remove from heat.

Makes 6 to 8 servings.
