Ingredients

    3/4 cup chicken stock, reduced sodium
    1 Tbsp grapeseed oil
    4 (4 oz) boneless pork loin chops
    1 small onoin, sliced
    1 Granny Smith apple, peeled, cored, and sliced
    1/4 cup apple juice
    2 tsp whole grain mustard
    2 tsp ground thyme

Directions

In nonstick skillet over high heat, drizzle grapeseed oil. Brown pork chops, about 3 minutes on each side. Transfer to plate.

Place onions in skillet, cooking until soft, about 3 minutes. Add apples and cook 3-5 minutes longer, until soft and light brown. Add stock, apple juice, mustard and thyme, letting come to a soft boil and reduce. Add pork chops and cook additional 10 minutes.

    Oh My Goodness! This came out AMAZING! I made this for the parental units, and everyone raved!

    I used whole thyme, not crushed; and I did cover them to simmer in the juices (my chops were a little thick and I worried about cooking them through.
