Ingredients



    * Egg, fresh, 3 medium
    * Spinach, fresh, 2 cup
    * Leeks, 1 leek
    * *green onion (spring onion), 1 cup
    * Semi-Skimmed Milk (ml) (UK), 50 g
    * Ricotta Cheese, part skim milk, 125 grams
    * Olive Oil, 1 1tsp
    * Salt, 2 dash
    * Pepper, black, 2 dash
    * Nutmeg, ground, 1 tsp

Directions

Chop leek and spring onions, and blanch in boiling water for a few minutes, add spinach leaves leave for a few more seconds and drain.

Meanwhile, beat together eggs, milk and nutmeg. Season with salt and pepper. Stir in ricotta pieces and the vegetables. Cook the mass in a frying pan with a little oil for 4-5 minutes, and then transfer to a grill, for another few minutes, or until the top is golden and crispy.

    This was an ok recipe for me-it was the nutmeg that Threw me off. Only used 1/2 tsp nutmeg instead of 1 tsp. Will try this recipe again without nutmeg. My man loved it though! - 6/30/14
