Introduction

I was asked to bring my "famous" secret coleslaw to a potluck, and know NOW that it needed to be tweeked to fit into my figure friendly lifestyle. This is what I came up with, and boy I am happy with the results. This is what I came up with, and boy I am happy with the results.

Ingredients

    8 cups cabbage, shredded
    1/4 cup carrots, shredded
    3 scallions, chopped
    1/4 cup Splenda No Calorie Sweetener
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 cup skim milk
    1/2 cup non-fat plain yogurt
    1/4 cup reduced-fat Sour Cream
    1 1/2 Tbl. Cider Vinegar
    3 Tbl. Lemon Juice

Directions

In a large bowl non-metallic mix together shredded cabbage, shredded carrots and chopped scallions. Set aside. In a small non-metallic bowl mix the rest of the ingredients together with a whisk until well blended and creamy. Add the creamy dressing ingredients to the shredded vegetables and mix well, until vegetables are covered. Refrigerate for at least 2 hours to allow the flavors to meld together. Stir before serving.

Makes 8 1/2-cup servings
