Are you a more-chocolate, less "dough" type of cookie conniseur? If you are, you'll like these rich, buttery discs that are crammed to the limit with three kinds of chocolate chips! Ingredients

1 1/3 cups all-purpose flour
2/3 cup oat flour
1/4 tsp nutmeg
1/2 tsp baking soda
1/2 tsp salt
3/4 cup salted butter, melted
1 cup packed dark brown sugar
1/2 cup sugar
1 tbsp vanilla
1 egg
1 egg yolk
1 cup miniature semisweet chocolate chips
1 cup jumbo semisweet chocolate chips
1/2 cup couveture (i.e. Callebaut) bittersweet chocolate wafers
Directions
Preheat oven to 325F, line several baking sheets with parchment paper - do not grease.
Whisk together the flours, nutmeg, baking soda and salt.
In another bowl, beat butter and sugars until well blended.
Add vanilla, egg and yolk, beating well.
Add the flour mixture all at once and mix until blended.
Fold in all the chocolate.
Space cookies at least 3" apart on sheets, they do spread a bit.
Bake 15-16 minutes.
Cool on sheets for at least 30 minutes before moving.
