My family loves this recipe, and they don't even know these are "lite" until I tell them! You can control the cholesterol/fat content by adjusting the amount of yolks you choose to use.
This spread is great on crackers as well as on Hamburgers or other sandwiches.
Also great as a warm dip.
Note: All except 2 Tbsp. of the rendered salt pork fat is discarded; since my MIL made the recipe, I don't know how much of the pork fat was discarded, so I included all of it in the nutritional data.
This is an adaptation of Foodiewife's wonderful Rustic Italian Tortellini Soup recipe. Substituting rice for the tortellini, skipping the hot pepper flakes, using coarsely-ground pepper and changing the proportions a bit turns it into a satisfying, healthy alternative to Bertucci's sausage soup, which my husband and I adore but which is loaded with fat and calories.
