Introduction

Note: All except 2 Tbsp. of the rendered salt pork fat is discarded; since my MIL made the recipe, I don't know how much of the pork fat was discarded, so I included all of it in the nutritional data. Ingredients

    2-inch cube salt pork (3 oz)
    1 onion, chopped fine
    4 med. potatoes, peeled and diced
    3 c. water
    2 c. corn kernels (frozen OK)
    3 c. milk (1% OK - will be thin)
    3 Tbsp. butter
    salt to taste (1/2 tsp.)
    fresh ground pepper to taste (1/2 tsp)

Directions

Cook salt pork slowly in a deep pan until the fat has melted and the pieces are brown. Pour off all but 2 Tbsp. of fat. Add the onion and cook 5 min. Add the potatoes and water, cover, and cook until the potatoes are just tender. Add the corn and milk and cook 5 min. Before serving, add butter, salt and pepper and reheat. Serves 10.
